FINANCIAL DISTRICT. Billy Tse's has something for everyone with a menu that hails from China, Thailand, and Vietnam. All three cuisines can be found under one roof, and all three are done quite well. This spot is a good choice for quiet conversation, and the dining room is relaxing with large windows that face the street. Free valet parking is an extra bonus, and delivery is available on a limited basis.

CAMBRIDGE. The decor isn't the focus at this Harvard Square raw stop, but folks clamor for its fresh sushi, prepared to perfection and at very reasonable rates. Cafe Sushi has been part of the neighborhood scene since the early '80s, and their experience shines through in the terrific rolls. In fact, local rumor has it that the fresh mackerel can't be beat.

BACK BAY. Riding on the sushi bar/cocktail lounge trend, Douzo Sushi pulls the duo off well. Neutral tones, cubic light fixtures and sleek banquettes flank the interior space, and artful dishes are served on crisp, white servewear. In additon to terrific sushi, the kitchen concocts tasty helpings of tempura, katsu, sirloin steak and other cooked eats. Edgy martinis, wine flights and imported beer round out the picture.

BROOKLINE. Fugakyu is an elegant sort of place that caters to a sushi loving crowd. The lovely interior features two special dining rooms that have interesting folding rice-paper screens for privacy and feature stone flooring and bubbling fountains. Regulars feast on plates of tempura, sushi, sashimi, and other traditional Japanese dishes. The green tea ice cream is a must-have meal finisher. Great cocktail lounge perfect for mixing with the upper crust.

CHINATOWN. Recognized as having some of Boston's freshest, tastiest sushi, this popular restaurant also serves until late in the night. Signature maki rolls are good enough to transform first-timers into regulars, and other Japanese dishes like yakiniku and nabemono-barbecue also prove satisfying. Waitresses decked out in traditional Japanese kimonos hurry about the room, making sure guests are accommodated.
